Known for our exceptional coffee and hearty food, we always endeavor to offer mouth-watering choices for all food lovers, whether you are Vegetarian, Vegan or Gluten-Intolerant, we have something for you!

Anastasia Theodore has been the proud owner and manager of Dancing Waters Café since 2007 and has strives to create nutritious and delicious meals and cakes for locals, tourists, and international clientele alike. No matter where you hail from, Anastasia wants you to enjoy good food and coffee in an exceptional location.

Anastasia is a qualified naturopath but her world travels and experiences has allowed her to find her love for healthy and delicious home-grown food. .

Through her many years as a strict Vegetarian and Vegan, Ana has gained an appreciation for a balanced and nutritious diet that nourishes the body as well as the mind. She brings this philosophy to her café and nourishes her clients with warming winter soups in the winter and fresh seasonal locally grown salads in the summer.


20170821_125552.jpgBefore locating to Springbrook, Anastasia ran the Royal Hotel in Eromanga, “the furthest town from the sea”. Having always been passionate about health and fresh food, she was able to create her own flourishing vegetable garden in the outback and loves to exercise every day. Her passion is to run along the mountain top tracks and trails in the rain forest and watching the sun rise.

In 2014 the Dancing Waters family grew with the arrival of Sahara and Tanami. These two beautiful twins can often be found on the front deck enjoying lunch with Dad and helping out Mum.
